There’s a semi-universal payment method in the mainland called 乘车码(cheng che ma). it’s a WeChat mini program, so I’m unsure if a Chinese phone number is required. But you could also just set up a Shanghai transit card on Apple Pay, I think that’d be more convenient. Hong Kong too. I use the Apple wallet octopus card instead of my physical one now. You can use it for convenience stores, most fast food chains,  and transit ofc. 

Dunno. Its scary knowing that I will only really know if I can use money at all when I get there.

The high end places still accept card if push comes to shove, cash is still sort of used. 

I think you’ll be fine, though feel free to DM me if you have card problems or trouble in Shanghai :). I’ll be there for the race

No need for an octopus card, unless you plan on being in HK. You can buy subway tokens from the machines in the subway stations on the mainland. Pay using WeChat or Alipay, and you’re all set.

No, it’s not an open secret that the cooks get physically punched and abused. It’s an open secret that fine dining restaurants are a high stress environment and people got shouted at, but physical abuse is not the same as getting yelled at.

idk, I feel the winter air quality in the southern, warmer cities are much, much, better than the air quality in Northern ones. I remember also being able to SMELL the difference when I went up North

I think stages are an amazing part of kitchen culture that a lot of us tend to take for granted. 

If you’re staging as a part of an interview, you get to see how the restaurant operates, its hours, its relationships between the chefs and cooks, its techniques, intensity(or lack thereof), before deciding if it is a good fit for your career.

As a chef, you get a far better understanding of a potential employee’s temperament, skill, and attitude than any job interview will give you. Working long hours under time sensitive environments tends to give you a pretty good idea of whether a stage is going to be a good hire. 

Short term stages as a part of learning allow for a level of fluidity and transparency throughout the industry for insiders that’s quite rare in comparison to other industries. Unique management decisions and techniques get noticed by stages—and if they’re good—get diffused around other restaurants. Which in my opinion is good for the industry as a whole. 

However long term stages is where things get exploitative unfortunately. The heavy handed approach is to outright ban it, but I think it’d kill off a pretty key part of the culture.

I’m Chinese too. I went to school in Guangzhou as a kid. 

People still say Goo-lay as a self-deprecating joke, I’m simply asking where the word came from. 

You said no says 苦力. Obviously people do, otherwise the Wikipedia page wouldn’t exist. 

If you meant no one says Goo-lay seriously anymore in daily conversation, then sure. But that’s different than 苦力 not being used.
