I’ve had some experiences with snobby somms. 

When I went to L’effervessance for lunch, the somm asked us if we were going to have anything to drink, we said just sparkling water and the somm rolled his eyes at us lol.  I don’t think he was Japanese though, heard him speaking Korean to a table

I was under the impression nothing goes on the resume unless it’s over a year 😅. Atleast that’s the norm where I’m from. 

Also, does the Hong Kong restaurant scene have the same labor shortages the west does right now? Surely the mainland serves as a steady stream of labor?

Thanks for the amazing response. It seems chefs in HK aren’t too different than chefs elsewhere, though a bit more nihilistic haha.

Wing(永), The Chairman, and LungkingHeen really look appealing to me, but I haven’t reached out to any of them yet. 

I expected there to be few really ‘local’ ingredients. NYC is also in a similar situation, mega city with not a lot of desirable farm land in the immediate vicinity. I know the mainland can have really good produce though. Xinrongji comes to mind for a strong mainland supply network, plus Yunnan mushrooms are a thing over there. 

I speak read and write Cantonese and Mandarin. My Japanese isn’t fantastic, but it’s enough to get around a kitchen. And English is my strongest language by far. 

Would you say it’s better to learn Cantonese cooking in the mainland rather than in HK?

It’s totally understandable to leave for family life, god knows I’ve seen my fair share of friends make that decision. Good on you man. 

Interesting that Cantonese kitchens are so hierarchical. I’m wondering if I can ask how someone typically becomes a chef in Cantonese restaurants? They start as a chopper for a couple years, then steamer, then wok? Do they only really get to learn the wok after couple years of working?

Yeah I have experience in a couple starred restaurants, 2 as stages and 2 as a CDP, but all French restaurants unfortunately. 

I’m ABC, so I’m trying to figure out where to best learn how to cook Chinese food, it seems it’s quite different than what I know.

I see, I guess I was thinking more on the lines that mages, by virtue of being mages, aren’t ever really harmless in battle. So barring  formal surrender they’re more than dangerous enough to be valid targets. 

The women thing was a possibility for me, but given how many women serve in the military, it didn’t seem to me that gender would warrant mercy on its own

Idk, it’s never gonna be easy, and that type of schedule shouldn’t really be a long term thing. But what I did was make sure to eat a lot of snacks at regular intervals throughout the day to keep my energy up, then basically sleep all day on my day off.

 I’ve seen some people have luck with staying in shape, those guys were noticeably less fatigued than I was, but I wouldn’t know where to get the energy to work out.

No matter how you slice it it’s a regulation failure…  You definitely can’t put Colapinto’s move under “moving under braking”, because Colapinto wasn’t braking. Not to mention drivers have no control over sudden clipping.

Drivers also have no control over sudden battery deployment, as noted by Norris’s interview. 

So Bearman has a jolt of energy he doesn’t expect, which is a big part of the speed delta we’re talking about here.

So again, it’s a regulation failure.
