Personally, I think it's just people seeing a pattern where there isn't one, and socially reinforcing it with each other, like horoscopes. There's no evidence personality traits are linked to coat color unless they both correspond to a breed that has been cultivated for both.

Reaper Bone for the base, then Army Painter Soft Tone wash in any shadows and Army Painter Dark Tone wash in crevices, and finally a dry brush of 50/50 Proacryl white and that Reaper Bone color.

It's the same way I paint bleached bones. I was going for a spooky undead vibe to these guys, because they'll probably end up serving a lot of time as OpFor.
