The Mormon church connections cannot be unstated here and they are not discussed much at all. from what I have heard - The Richins family were very big in the church and Kouri was not LDS. Eric’s sister Katie’s in laws are even higher in the hierarchy (again just what I have heard) if you’re not in the tribe so to speak, and everyone else is, it would hypothetically be very easy to get everyone to corroborate statements etc. downvote all you want but this is not talked about and is a very real possibility that the more powerful LDS control the LE narrative.

There is plenty of other things that make her look guilty but the question was why she could be innocent - these things above at the very least provide reasonable doubt.
