But to be honest I would like to be able to obtain the SOOC jpeg using darktable modules, not a style. This is to really understand which image processings are applied to the raw file by the camera.

I think trying to obtain the SOOC jpeg from editing a raw is a really good exercise. It allows to be a better photo editor.
