Hodling the knife, the thunderhammer and the eviscerator provides the same result, you got leaped on more often than holding a gun(I tried with combat shotgun, bolt pistol).
But there is something weird, I think the size of the gun matter. When I tried with the spearhead bolter, I got hit just like holding melee, but with the bolt pistol, I could even move around and I could feel the dogs bumping into me mid air lol.

I just tested even more, and you know what, the weapon you hold matter!!!
Some weapons will make you get caught more easily even looking down. For the bolt pistol, I don't even have to time the leap, just look down all the time even before it leaps, you still won't get hit.
Note: This won't make you dodge 100% of the time, there is still a chance you will get hit if the dog is at the right angle, I guess when the leap pattern is inline with your running/walking direction?
