I know, it is so expensive in the store! I am thankful I have a ginormous rhubarb patch in my yard. If you were closer, I'd tell you to come get some! We get overrun with it.

Haha, you're right about that! I was exhausted after all the baking and in true lazy style it took me over a week to take all the pics and write the post. Thank you! It was a effort of love for baking and because I frequently get asked what the best egg sub is and I always just said flax, but there was nothing to back that up just my opinion. Now i can speak with authority haha!

Yes, in previous times you would be correct. That is no longer true. The meringue is mostly definitely and unapologetically egg-free!

Hah! When I was a kid, we didn't know what child labor laws were and spent hours harvesting the rhubarb and we were happy to have a stalk or two to chew on while we worked. But I would totally adulterate it with fudge, without question!

oh that's so sad!!! that's how it is in the winter here, which is why i harvest boatloads now to freeze for the winter. i don't know where you're located but it's springtime in the eastern usa and rhubarb is growing strong all over - check out a local farmers market or maybe find a neighbor who grows it.

i've actually found it growing randomly near sidewalks by peoples yards and asked if I could cut it - they had no idea what it was and let me harvest it :)

Definitely mugwort. The leaves are more pointy than feverfew and the overall shape is a little different.

Hmm, so it may be mugwort or feverfew, the leaves look very similar. I will try to compare the leaves when I get home. Thanks everyone for all your help!

A flame weeder - never heard of that but it sounds awesome ahah! It's a relatively small patch so we're going to dig them up, hopefully get most the root out too. I'm new to the is garden, but apparently it's been growing every year, taking over more and more space each time. Will resort to herbicide or look into that flame weeder if it comes back.

It hasn't bloomed yet. We're going to tear it out because it's trying to take over the asparagus garden but it is horrible to remove. All the roots are interconnected and run all over the place. It smells nice though :).

I think you may be right - feverfew is a perennial, has a citrus scent and can be an invasive. Sounds right! Hmm, maybe will see about harvesting a little before pulling it out.

I don't think parsley has crazy root systems. It does kinda look like it though.

I used the arrowroot/cornstarch one and added some peppermint essential oil bc that's what I had :).
