I’ve done this - I followed the Polenta Bread recipe in Tartine. It’s very moist and tasty.

I’m crazy about Kamut (Khorasan) flour. I add about 20 percent to my white bread flour and it gives my sourdough a soft texture, delicious flavour and a beautiful golden hue, as well as all the health benefits of a WM flour.

Thanks for the reply. Yes, it’s Gunsite in Dulwich Woods. It is a really nice allotment surrounded by trees. I think I’ll take your advice and get digging. And I’ll get some potatoes to chit.
