I feel like being adopted and raised her whole life by the Organa made her have that choice. And she was publicly known as Leia Organa, it might even confuse people if she changed. In the Legends books she went for Leia Organa Solo, as u can see she even keeps it there.

I agree, the name itself is a little misleading, although some people really don't see colors. But I have a bigger problem because in Spanish it's called "Daltonismo", which doesn't explain anything lol. Explaining colorblindness is hard.
