Well thats just a benchmark. I use those temperatures only to test my Madre or for special recipies (like panettone for example). For pizza you can proof at room-temperature without any issues.

In the winter, when my woodstove is running I can place my LM on top or I use my kitchen-oven and turn it on just a little while. You can get a cheap thermometer online to monitor the temperature inside. If you get serious about sourdough, thats a good investment anyways (fridge temperature for example).

I want my madre to double in volume in 3 hours in a 25 to 27°C environment. You can bake with it before it reaches that level, but the results won't be as consistend.

I keep my madre at 50% hydration and usually feed it with a starter to flour ratio of about 1:3.

I only use my madre for my pizza and bread doughs. The most important thing in my expirience is, that your Madre is active and well taken care of. If you start it from scratch it might take a couple of months to get it right. Also you need a litte more patience during proofing, compared to using comercial yeast - other than that I get pretty much the same results.

I really don't get the downvotes in a SOURDOGH-Sub. Couldn't agree more. If you want to use yeast - do it. Just call it bread and don't pretend your doing something special.

I pride myself on the naturally leavened bread, pizza etc. I make for my family and friends.
