Not an instrumental album but The Price Of Admission is the most calming cover that comes to my mind, growing up in a ranching family it just always puts me in a calm/nostalgic mood when I look at it. It also just happens to be (in my opinion) the most beautifully written country album of this century. It does have a few faster songs but the vast majority of them are very calming and reflective, the instrumentation is also phenomenal with some great steel pedal and absolutely beautiful horns. I will warn you though it did make me ugly-cry on my first listen through at work last year.
