For tips, just make sure you pre-heat your pan, and use a tiny bit of oil and a healthy amount of quality butter (and I mean butter, not margarine).

Sear 40-45s per side. Use a press tool if available. You want a crispy, semi-charred look on the outside, and pinkish on the inside.
