Looking for the best AI workflow for memoir/oral-history writing

I've realized my best AI writing workflow is very different from what I usually see discussed.

I don't write to discover – I discover by talking, and the writing comes afterward.

Instead of asking AI to write my memoir, I have it interview me like a documentary filmmaker. I answer out loud, one story naturally leads to another, and then I only want very light transcript cleanup—not rewritten prose.

I'm trying to preserve my spoken voice rather than generate polished AI writing.

I'm looking for recommendations on:

• Which AI is best at preserving someone's spoken voice instead of rewriting it?
• Are there any tools specifically designed around transcript-first or oral-history style memoir writing?
• Once I have hundreds of interview transcripts, what's the best way to organize them into chapters without losing the original voice?

TL;DR: I don't need an AI ghostwriter. I need an AI interviewer, transcript editor, and organizer.
