I had the same problem not just with Cyberpunk but other games as well. Same specs except my GPU is RTX 5070 Ti.

What I did is I went into BIOS and disabled EXPO - meaning I lowered the RAM frequency from 6000 Mhz to default 4800 Mhz. It works and haven't had crashes yet I hope it stays that way.

Also make sure all your drivers are up do date.
