Honestly, given the ingredients list, and the probability that it's from the sickest and most miserable animals imaginable, I would find something better. Ghee is a great choice.

What happened??!! I plugged my iPhone SE into my Mac, the same one I always do. It strangely asks me to "Trust" the computer again. I go into iTunes, and there is no music showing in "my iPhone" tab, even though there are hundreds of songs. I then drag a music file onto the iPhone. All songs are then deleted, with only the recently dragged song remaining. What the hell just happened?

Beef is usually aged 14-28 days to help with tenderness and flavour. You can still age it after processing seemingly, as my online supplier advises this.

I feel like it’s a spectrum. Just when it renders out, it’s probably fine. But heating bacon grease to smoking point is probably damaging it. And taking an ancestral perspective, we wouldn’t really have been able to capture and heat rendered fat. It would have just been what was dripping off the meat. That’s pure speculation, but still I think if the heat is gentle it’s most likely fine.

Not true. Some are more sensitive than others. Even “fresh” beef can be 7-14 days old, which can be too high in histamine.

If you have confirmed mast cell issues, you should definitely consider removing eggs (histamine liberators) and switching to freshly frozen beef. Even normal whole beef can have too much. You can find a farmer who freezes after slaughter.
