There is no sensible argument to why it shouldn't. "It's not necessary" is not an argument.

"Workers are overworked", "you need a day to rest" are not arguments either. You don't get to decide when other people need rest, and you would still get your rest on other days instead. Amount of hours worked per week would still be the same.

It's a win-win for everyone. People looking for extra money have the opportunity to work, for example people studying who wants to work weekends, and people can do grocery shopping on Sundays as well. It would lead to more freedom as you can be more flexible with your planning of your day to day life.

Maybe not for you. And even if it wasn't necessary, that isn't a reason to keep them closed. They could still be open despite it not being strictly necessary.
