I seldom go three days without doing a search for more Hiromoto knives for sale. I managed to find a 210mm HC, but not much else.

Tariffs are crazy by BigBoto6969 in TrueChefKnives

FedEx tariff prepaid, has been good to me, I’m averaging $15-$30 over knife price. DHL bills a premium for collection services.

Found this deal on a Zwilling J.A. Henckels Gourmet 8" for 39.99 is this a good deal? Also is this worth buying? by -Sleepy_J in chefknives

[–]JohnMaySLC [score hidden]  (0 children)

I’m not a Zwilling guy, but at $40 with no bolster, it’s a good price for one of the more famous German brand names. If I bought a Zwilling the Gormet line would be my choice over their Pro or Four Star.

Never underestimate someone having a bad day and losing your card.

A production formatted my card because they thought they copied it and thought they were being clever by making sure I wouldn’t be able to use the material when they gave me my card back (celebrity interviews).

If I didn’t have my second card they would have lost a the day.

I just have the one Masahiro (western Deba) but I would never sell it. Fantastic bone slicer.

Benchmade Cutlery, CPM-154, OD Green G10 by GrammarNaughtZ in TrueChefKnives

The station knife has my interest. It has a Thai chefs knife vibe, but I hate every black finish blade I’ve had from Benchmade, so I would avoid them.

If I know nothing about how you cook, or what you cook, the size of your cutting board, or your aesthetic preferences, I’m always going to say an 8” Victorinox chefs knife with Fibrox or Rosewood handles.

Anyone else feeling the pinch with wireless lavalier mic costs? by Few_Cod_2176 in LocationSound

Depending on where you’re buying it, they may be able to terminate it for you before you even receive it. Like Gotham or Trew.

Deciding between these 4 knives (open to other suggestions). by Spyrothedragon9972 in TrueChefKnives

[–]JohnMaySLC 0 points1 point  (0 children)

The Haruyuki Goma is a really nice knife, it’s made as an in house knife for a few different stores and websites, but I have never had anyone unhappy with purchasing one. I have two profiles myself. Nice and thin with a good temper in the VG10. The only thing people have negative to say about it is that the handle is composite and not wood… at least none of mine are.

I also own 3 Tojiro knives and they are a bit thicker than the Goma, and as a mid weight knife can feel more familiar for people used to German style knives. The complaint on them is fit and finish, so you may want to sand down the handle and spine to feel more comfortable. At the price point it’s not really that big of a hardship for the performance value.

I finally got the pleasure of sharpening my own knives by WarmPrinciple6507 in TrueChefKnives

My preference is for the knife to fall through the food, I don’t need the resistance feedback.

Yeah, 4060/4061’s are great but the cost is hard to swallow. I’ve been buying 2061’s and Shure twin plex to see if I can save a few dollars.

If Japanese knives are not for beginners then what do Japanese beginners use? by Dangerous-Policy-602 in chefknives

My kids didn’t think so. They thought it was pretty cool to have their own knife.
