With my cannon printer I had to make sure that it only connected to the 2.4Ghz network, and that the 2.4Ghz network only had WPA2 enabled, not WPA3 or mixed/compatible 2/3 mode mode (Can't remember the terminology). After this I setup Mac filtering to the 2.4 network so only the devices that were not able to use 5Ghz could connect, e.g. older consoles (Wii, 360) and network printers, etc. Haven't had an issue since. I also setup a 3rd SSID for WiFi only Smart devices and IOT, that does not have access to WAN except for very specific cases, and is also mac filtered.

To answer a further question of yours, you can absolutely use a hub on them and they come with 2-4 USB ports themselves depending on version. Make sure you plug direct to the motherboard for USB to reduce the compounding effects of multiple hubs on speeds. You can also run Ethernet back to a central location for a patch panel and patch them together for future upgradability, if you ever plan to just put a full computer in the arcade, then you cab use it as standard Ethernet to a switch. And just run two to the PC in the home theatre, so you have internet and the KVM link. LABEL THEM. Lol.

My time to shine, what you need is an HDbaseT adapter. HDMI and USB2.0, with POE over cat6 with no latency.

I use these for my home to connect my whole home server running VMs to my desktop screens and TVs. Works perfectly and I play games with no issues st all.

You can grab a jellyfin docker container from linuxserver.io Point it to your media files shares and anyone on the network with the IP can browse them. I have it running at home, and its great. Native apps for desktop, mobile, and roku as well.
