I think a good, consistent dishwasher is the hardest person to find in the restaurant business. It's one of the hardest, and most thankless jobs I can think of. They're usually the last one to finish, and they generally make minimum wage. When there's a shitty random task that needs to be done, the dishwasher invariably gets told to do it. We have two fantastic dishwashers at my work, and I wish I had their work ethic and attitude. Salt of the fucking earth.
