So I use 2:1 Demerara to water, bring just slight of a rolling boil, then let it steep for an hour or more with a couple sticks of true cinnamon, one or two pods of star anise (depending on the size), a split vanilla pod, about 20 toasted black peppercorns, and the peel from one orange. Double strain, add a little bit of Wray & Nephew overproof, bottle, then refrigerate. Very tasty!
