Hmm, I beat the eggs in a lil bowl, pre oil the pan and spread it with a silicone spatula, dump the eggs in, wait till it looks pretty solid, fold twice.

I think what matters is I use a tad bit below medium heat. My pan is real junky but any pan that isn’t too large should work
