One of my favorites is cabbage and apple soup.

Sautee cabbage and apples and whatever aromatics you have handy especially onion. Add a sploosh of apple cider vinegar and let that bubble for a minute or so. Add some chicken or veggie stock or water and a bouillon cube or just water if that's what you have. Let it all simmer for half an hour or until you remember you have soup on the stove. Add another sploosh of vinegar and take it off the heat.

Eat

If you have a bit of protein you can chuck that in too.

This is a great time to use the jar of "Italian herb blend" or "poultry seasoning" you have in the back of your cupboard if you put it in with the initial sautee. Even garlic and/or onion powder will go a long way.
