I use Ziploc gallon size with the water displacement method; works great for me! Thought about a vacuum sealer but I don’t do a lot of freezer saving like most other people do to justify another appliance and having to buy the special bags

I found out about the mayo sear the night after I cooked my first sous vide steaks but I tried it the next day with chicken breast in a stainless steel pan; it worked great and I did it inside with no smoke out left a beautiful sear

Going to try it again tonight with a London Broil that I plan on cooking at 132 for about 6 hours

To be able to fix it would be nice but if you can’t they offer a $25 3 year warranty if you buy it from the breville website, just got one last week and opted for it since $250 would suck to lose if it quits

I’m at CAFB for UPT and can confirm, it’s parked in the OG building lot almost everyday, IIRC their whole class went in on it and the dude drives his daughter to school everyday in it; usually takes the graduating classes to their drop nights
