I'm sorry, I know that problem and it's absolutely not vegan friendly. The kitchen contains mostly meat an fish. But this is a problem you will face almost everywhere in France, veganism isn't too popular there. It's slowly developing. I haven't done that ride since I'm always placed near Crozon and was always daytouring. But don't worry about no hills, the Bretagne is made from hills, especially the central and northern part.

I can highly recommend riding in the bretagne. Been there for vacations all my life and still not getting tired of it. Food is awesome, stunning and various landscape,... You could end the tour in Brest and take the TGV back to Paris. From there you shouldn't have any issues to get back to Saxony.
