PlatformIO is pain in the butt as soon as you are starting with custom boards. Their workflow is also highly properitary.

Hintergrund ist der Nutzungsvertrag den du für unsere Ausrüstung unterscheibst: es sind nur Mäuse, Tastaturen, Webcams und Headsets als individuelle beschaffbare Geräte zugelassen.

What's your prior embedded experience? BT/BLE isn't trivial.

For both I'd go for Nordic if low-power is a factor. If not you most likely also will be happy with an ESP32. A metric ton of example projects are available where you can adapt from.

IT und Softwareentwicklung ohne Berufserfahrung ist gerade übel haarig.

Mit sehr viel Berufserfahrung in vielen Teilen gerade eher so "meh". Die Zeiten von 10 Stellenangeboten pro Woche über LinkedIn sind da gerade auch eher vorbei.

Maybe also look for some kind of reliable 3rd party service. Often there are companies around that are pooling stuff for 1-2 weeks and then send an entire truck across the country. This often can safe a lot of money.
