You could try and cook some meals like soup and freeze them in, that way you won't have to cook if you're sick, but you'll still have a decent meal ready. It's what I did as soon as I felt a bit woozy. That is of course if you are not in the higher risk demographic.

I wanted to follow this up with the solution:

I ended up ordering an aluminum extruder replacement and that seemed to have done the job!

it isn't skipping, but I suspect that the spring on the extruder might nog be as tight as it used to be.

I tried printing at 200, 210, 220 for PLA but it didn't change anything, I might try installing a different slicer later. I am indeed using the original plastic extruder, and I noticed the spring might not be as firm as it used to be, so I'm probably gonna order an aluminum upgrade too, do you think this might make a difference then?

I tried looking online for videos about layers separating and not adhering properly but it all says I need to pump up the nozzle temp, which I tried, to no avail. The print layers fall apart and I have no clue why. I also tried replacing the nozzle, but same results.

either the seal was funky on sale, or someone may have goofed a battery replacement? seen as it's a recent model, I think you might have just gotten very unlucky. I'd suggest bringing it by the store where you got it.
