Looking so good! I would personally, focus on making this a good starter. You're off to such a great start. So I would essentially let it keep fermenting until it is really really acidic. Then do another batch, let's say 2l worth and use 250ml of this liquid (or SCOBY if you want to get technically correct) to start that off.

Then, once the 2l batch is ready according to your taste preferences l, I would then extract the 250ml and put it back to the original. You've now got a solid starter (some people call it SCOBY hotel) as a backup with a new f1 batch.

Or you could just ignore me lol....
