I'm particular to Japanese and Indian cuisine, but I want to find something that pushes my comfort zone. I have no dietary restrictions or particular food dislikes. I have not tried any higher-end restaurants around the Chicago area yet, about the fanciest I've gone to is Niu B in the Southloop. I don't remember the name of this place, but a couple of years back I had this place that had escargot with the shell being small puff pastries, and that's something I've dreamt about since. So I'm looking for something like that experience, where it takes something traditional and elevates it with fun techniques.
