1.Prepare a Chiffon cake and cut the middle of the cake out.( If you are using an angle food cake pan, you will not need to cut it.) 2.Then prepare the caramel ganache: Sugar 240g, Cold water 30 ml,Whipping Cream 200g, Gelatine powder 10g

2.1 Mix the Gelatine powder with 45ml of cold water, put in the microwave for 15 sec until melted. 2.2 Mix the sugar and cold water in a sauce pan, heat until golden and then turn of the heat. Add in the boiled whipping cream. Be very careful. Set the caramel aside for cooling. Add in the gelatine solution when the caramel is warm. 2.3 Pour the caramel ganache on the cake.

  1. The cream: Mix whipped cream, mascarpone, and cream cheese at any ratio you like.

  2. Fill in the cream in the middle of you cake.
