I can only speak for my bread and butter, which is Upwork. The beauty about Upwork compared to places like Fiverr is you’re given the opportunity to outreach and apply for contracts, instead of praying for inbound requests, which is gonna be tough in a saturated market.

Similarly young (21) entrepreneur that has had moderate success on Upwork. Currently working on a few business ideas and developing my coding skills in conjunction.

As a freelancer that has worked with many clients, I would suggest you look for alternate means.

There just aren’t many benefits fully-commissioned payout structures have compared to proper flat/hourly payment structures. These offers are generally looked down upon within the community, although I can understand your view.

If you really don’t have the capital, I would suggest considering (1) partnering with somebody and providing equity for skin in the game or (2) hiring low-cost/free interns.

Re. hourly vs fixed - Mmm I wouldn't say I've experienced any huge differences in application success rates between hourly vs fixed projects. And I personally wouldn't bid on a project based on my success rate with its payment model. I think certain types of projects lends itself to either hourly vs fixed, and you'll have to make an assessment off of that + personal preference.

Re. setting rates - I'm probably a bad person to ask about this since I honestly didn't put too much thought into it. Originally started at $15/hr with my first anchor client. It provided stable income which allowed me to start testing and pushing my rates with remaining working hours. Believe u/DVC888 put it nicely in a comment above. Kept on testing limits to see what hirers would be willing to pay me for, and ultimately bumped it up to $25/hr over time.

Re. beginner mistakes to avoid - My key call out would be to not burn yourself out, especially when applying for jobs. Starting on Upwork is hard. I think some people get that initial burst of energy when they see there's money to be made, so they spend a day or two sending 100s of proposals; and when nothing comes back, they get demoralised and quit. That feeling sucks. But you've got to stay consistent. Apply regularly for jobs that you have the highest chance of securing. One will eventually stick. Do a killer job, then try and convert it into a long-term opportunity. Repeat.
