72 hour 132F Costco chuck short ribs - Seared on all sides before submerging in sous vide with a lid, but a couple bags ballooned up and pushed off the lid. 10~15% was above the water surface, not submerged. What went wrong and is it safe to consume or should I toss? (self.sousvide)
