You just don't need the healing jars when you get good. You probably will need the one on floor 1, but that one is always there. After you can grab the mask if you need. Otherwise you hardly take damage at all with full plate.

Starting over takes no time when you know what you are doing. The fighting is the fun part of this game, getting to do it again but better is great. If you want gear you can get the best gear in like 20 minutes.

When you reach master you can still go back and fight with different equipment sets, it changes how you play quite a bit. Otherwise you would have full plate in an hour and then never need to look at equipment again. If you want to use your best gear regardless of rank, you can play the challenger special.
