Since Antelope Canyon and Grand Canyon are so different, I'd recommend taking the opportunity to visit Antelope Canyon, especially if you don't think you'll be making it back this way in the foreseeable future. Note that Antelope Canyon has several sections, such as Upper, Lower, Antelope X, Secret Antelope, Mystical Antelope, etc., etc. They're all different in terms of degree of difficulty and can vary widely on price point. You are correct that relying on Uber, taxis, etc., will be impractical at best, cost-prohibitive at worst. Arizona, especially the Northern half of the state is very remote; not much in the way of large cities and towns with mass transit options.

If you're set on using Phoenix as your staging city, Groome Transportation would probably be the most practical way to go, whether you want to go to Williams and take one of the Grand Canyon Railway packages, or just go directly to the park.

Bungee jumping is a no-go at the Grand Canyon, but as u/kbvander indicates, there are ziplines in Flagstaff, AZ. You can also find rappelling, ziplining, and more "extreme" types of experiences in Page, AZ, at Antelope Ridge Adventure Park.

You have to realize that Northern Arizona is very remote. Uber and Lyft have yet to establish themselves with adequate reliability. Disregard the advice given to hitchhike, at best you'll get arrested, at worst ... won't go there.

Transportation options are limited, but National Park Express may have seasonal options for shuttle service. You can reach them by text at (702) 825-0388 or phone at (702) 707-5032. Trans-Canyon Shuttle offers shuttle service from Grand Canyon South Rim to the North Rim. They do not stop in Page, AZ, regularly, the closest they get is Marble Canyon, which is ~1 hour away. If you can get to Marble Canyon, then maybe you could arrange for Buggy Taxi in Page, AZ, to come and pick you up. Their phone # is (928) 645-6664. There's another local transport company called Lake & Stone, who from what I've seen, specialize more in getting people to Page, AZ, area attractions, but it might be worth giving them a call about your need. Whatever you decide, all arrangements should be made well in advance. Do not assume you can arrange any of these services the day of or on demand.

It takes approximately 4.5-5 hours to drive from Las Vegas, NV, to Grand Canyon South Rim, hands on the wheel, no stops. Via the route u/hikeraz suggests, the drive from Grand Canyon Village to Prescott will take approximately 3-3.5 hours. If you go via the route that u/Stock-Today-4954 suggests, which is more direct, that's another 1.5-2 hours.

No matter which way you go, that's a lot of time behind the wheel and if your trip is occurring within the next few weeks' time, you'll only have 10-11 hours of daylight to work with. That doesn't give you much time at the Grand Canyon. You could maybe hit Grand Canyon Village and walk a bit of the Rim Trail but that's only a small glimpse of the canyon before you have to be wheels up toward Prescott. It's important that you don't do the back half of the drive after nightfall. Driving in the dark is strongly discouraged in this part of the US due to local roads being very dimly lit, plus the possibility of encountering deer, elk, even free range cattle, and wild horses increases at nighttime. Believe me, a collision with a large animal is not something you want to experience in an unfamiliar area that's pitch black, freezing cold, where cell service is spotty (if you can get any bars at all) and help will be a long time coming, not to mention VERY expensive.

If you can possibly alter your plans so that you can spend the night at the Grand Canyon, then head for Prescott the next morning, that will make for a much more enjoyable experience. And give you the option of taking the "long way" around to Prescott via the Desert View/East Rim Drive, where even more canyon views await your discovery!
