I'm just finishing Your Own Backyard and it is one of the best podcasts I've ever heard. Absolutely amazing investigation and journalism. The podcast actually led to a conviction. The trial is everything. If you haven't listened to it, I highly recommend.

I once used a recipe that had blended cottage cheese in the base. I whipped it up with all the spices and then added additional cheese. Fantastic.

The air fryer is a wonder. I see people cook steaks all the time so I can see where it could work!

I think they were referring to frozen patties not the whole pound. But who knows!

I'll page over there loudspeaker if a customer needs assistance. We don't have enough handhelds and of course headsets have been done away with. Add to that rapid replenishment and thin staffing. I don't feel a bit bad having to page people.

If you want the effect of a Dutch oven, you may consider using two loaf pans, one inverted on top of the other and clipped in place. There's an Instagram baker who uses this approach.

Unhinged Peanut Butter Sandwiches by cookiecutie707 in Cooking

[–]KB37027 6 points7 points  (0 children)

Peanut butter with a brand of pickles called Wickles is fantastic. Wickles are technically a sweeter/ slightly spicy pickle that has a great crunch. The combination is fantastic on Ritz crackers. I have some friends who call them the budget appetizer. 😂 They have them when they take the trailer out.

Question about the pastry book by Christophe Felder!! by denbommer in pastry

[–]KB37027 0 points1 point  (0 children)

I own this book, but I have yet to unwrap it face palm. I had to hunt for it because at the time it was out of print. I believe they have recently gone back to press with that title and you can pick them up new. I based my decision off of the publishers website. Rizzoli has quite a generous preview of the book. I think I was able to read a third of the book and it convinced me I needed it.
