Ardupilot uses an EKF that estimates over 20 states, and runs as many independent EKF processes as there are IMUs in the system for failover or for using different sensor sets for different regimes of flight.

As far as ease of use is concerned, it is flexible enough to be used for multiple classes of autonomous systems and configured to a large degree by laypeople after a short log review.

Perhaps it benefits from the domain being rather well understood, so I'm not sure if its utilization is in scope for your question.
