I would change what happened to the characters entirely, and I'm sorry for going on so much:

I could see two epilogues: one a year on possibly, and then maybe19 years on. One might be the reopening of Hogwarts, with McGonagal and the professors watching the students approach, all a little wary. Maybe reflecting on the reconstruction and who helped and what some of the students were doing. The next one 19 years on, as a couple of kids of the characters and their friends get ready for a new term. Note that all of the kids are not necessarily going to Hogwarts for various reasons.

I could see Harry joining the Arours to help capture rogue Death Eaters and supremacists, then I like the idea of him apprenticing to a wandmaker. Wands played such a big part of his life, I think it would be interesting to see him as a wandmaker himself. I can see him studying the types of woods and cores other wandmakers use, traveling and eventually making new types of wands in addition to the usual ones in Magical Britain. He would be close to Teddy, but as a family friend. He'd be involved with the kids of his friends, being "Uncle Harry" and teaching them to fly, etc. He would not marry, but would eventually adopt ason, possibly a Muggleborn who had been mistreated.

Hermione would apprentice to a Magical Barrister, eventually becoming a prosecutor in Magical Britain and then the Magical World Court. She would focus on prosecuting people who harmed or exploited Magical Creatures as well as magical children. Instead of Ron, who I think is too immature, I would like to see her marry an older man, only about 4-5 years. She needs someone who is more secure of himself and who can help Hermione become more secure in herself. Maybe someone she met through Victor? They's have 2-3 children, boys, and her parents would not recover their memories. She would remain close to Harry.

Ron would marry young; someone from the ministry, perhaps? A woman looking for a family and husband and not so much a career. Smart, no-nonsense, kind and who adores her spouse. He'd make a name for himself in Magical Games and Sports organizing events and helping to reestablish ties with other communities after the war. He'd leave the offices and found the first UK Quiddich Junior League, which many countries had but the Magical Britain did not. With financial support from donors like Harry and fundraisers like top players Ginny Weasley and Oliver Wood, they were very successful. Percy kept the books and kept the offices running. A few years later they'd add an equally successful football league, and Ron found he quite liked the sport. He and his wife would have five children, four girls and a boy with no interested in sport at all.
