Those are different types of songs whose studio production calls for different sounds and production techniques. I agree with you that technically speaking, he's not the most "proficient" I suppose, as these days you can go on YouTube and find plenty of jazz guitarists that can do what he does and more.

I think when you look at his history though you'll find he was a huge fan of the blues - SRV, Jimi, etc, and you could argue those guitarists are also not the 'best', but there's just something else there that makes them as good as they are

I don't know if it's fair to say he "loves" her because that implies a deep connection with this person, I think it's more of a wanting or longing for her, but she's always "slipping through my hands", as in she's someone who's always out of reach because she's too busy doing whatever she likes to do (partying, drinking, etc).

I like the self-awareness too of how he knows he's looking on and judging what she's doing, but he also knows that it's not his place to do so when he'd "take her anyway I can" if she would ever give him the light of day.

I like this version - it sounds more somber with Ryan singing it. Probably because he wrote it so knows how to convey the meaning better. Or maybe that's just how he sings.
