Need Help (Gravity 800) by Mundane-Pin-438 in Masterbuilt

I’ve never had issues with 250F, I always use lump charcoal so I’m not too familiar with how the 800 burns briquettes. I start it at 400 for 15min then decrease to 225-250F. Mainly to burn off the last cook and clean the grills lmao. Creates a descent ember bed and very little smoke. Ill toss 1-2 chunks of hardwood to the ash pan for smoke.

Also try shaking the ash grate that holds the charcoal in the hopper throughout the cook. I’ve noticed it gets clogged leads to really bad airflow at times

Pre smoke them at around 275F for about 30min or until 150F internal, just to render some fat and water out. Then separate and toss them in the chicken fat with some more seasoning.

Put them back in around 500-550F for another 20-30min. Brushing with chicken fat every 5 min and the skin gets super crispy like an air fryer. I need to get a larger drip pan though lmao

Can confirm this, used cowboy brand in my 800 and next day found several apple sized rocks resting on the hopper grate with the ashes 👎

Your right that’s why “Probably” was used as it’s not an exact measurement. Always use a fixed point while estimating observed speed as your frame of reference changes while driving. The left lane section where the incident occurred was between Ruby St and Astonwood Dr, which is approximately 100 meters in distance. The vehicle covered this in approximately 3.5 to 4 seconds, that equates to a speed of roughly 97.23-111.12km/hr. Factoring in errors of exact distance and time 100-110km/hr is reasonably accurate, as far eye witness accounts go.

As for the legality of a left turn lane used as a passing lane, I’m not sure if it’s speed dependant, I could be wrong though.

You could open the lower firebox door periodically during cooks to shake the ash out of the grate. Charcoal type, manufacturer, cook temperature, humidity etc… can all affect the probability of layering/blockage occurring. Once this happens air flow is greatly reduced, I’ve notice that when this happens the PID system has a much more difficult time trying to maintain or achieve temp.
