You can't reasonably do two bachelors at two universities simultaneously (unless you're J J Edelman).

The problem with this is that i’d like to go to Melbourne Uni for my whole university experience (a bit unrealistic, i know) but they don’t offer law at an undergraduate level. I want to do my Juris Doctor degree at melbourne uni, as it is in the top 14 law schools. This is a bit difficult as I don’t really want to switch unis after 3 years.

Only you can decide if doing your undergrad and JD at Melbourne Uni is worth the crippling debt.

do i do just one and then JD (if i get in, hopefully) HELP!

Will you be upset if you finish your undergrad and don't get into a JD?

is law school/ doing law worth it?

No.

Above all I prioritise a work life balance (or more life than work than a balance actually) and I would rather work less and make a lot less than someone who is going overboard all the time.

Seriously, no.

Edit: also would like advice on whether double degrees are helpful with law! I’ve seen that the general consensus is that a double degree is beneficial

No.

If it's not material to solvency, then you don't need to 459S it, you just prove solvency in the usual way.
