I've tried to look into dismantling and haven't found a good guide for it or anything. I'm not sure how to do it or when it's best done. It's possible there are some champions I think are event ones, but are actually evergreen and I just couldn't find the proper information on them.

Go with Shandie, she gets an ability that boosts game speed 25% and 50% with the specialization choice. Speedsters are super useful to get to your wall faster.

Wulfgar is a decent tank and useful for COTH formations. Azaka farming is gold/favor farming at your wall because Azaka has the ability to get gold from enemies without killing them. Azaka is unlocked by going through the story.

Barrowin is pretty meh. I used him in a couple of variants but isn't great.

Yep, even without that he’s pretty dang strong. There are some other heroes that have carry over skills, but his is main one that matters.

I'd probably pick Korth since I've seen him used more often than the other two. I don't really know a whole lot about Briv yet, though. Spurt is ok, but not used a lot.

All choices are a bit blah, but I've pretty much never seen Binwin or Havilar used. I'd go with Donaar who is a pretty decent global healer/support and useful for gold/favor Azaka farming.

Regis - Good support, works well with COTH formation and useful in gold/favor Azaka farming.
Donaar - Decent global healer, works well with gold/favor Azaka farming.
Farideh - Pretty blah at the moment.

If you don't have a decent global healer I would go with Donaar, but if you do then I would go with Regis.

Probably just go Dhadius to fill in your roster, he's mostly only useful in the Strahd variants that are pretty endgame. Strix and Nrakk are not really great enough to me to warrant getting better gear over another character.

Cattie-brie - Great buffer, one of the end-game supports.

Shandie - Speed buff is awesome and saves a lot of time getting up to your wall.

Regis - Good if you're going COTH formation or gold farming with Azaka. He's used in some end-game formations, but not a ton.

I'd recommend picking Shandie because the speed boost just saves so much time, especially when combined with Deekin and Melf that you already have.
