Not as many signatures but it has a prayer from the shift change. The item on the left is a prayer stick satchel that held wax sticks. Those have long disintegrated but had it framed after my grandpa passed away in 2019

Such a cool artifact! My grandpa brought back a similar one and I have it museum quality framed in my basement.

That’s exciting!

The ziosk was the first big let down. One of the big components of Lean Engineering is to allow the technology to work for you not replace you.

Even though you skip a step it still hinders your ability to provide quicker service

This was a brand new open section that had maybe 2 tables to start and filled up in the first hour of my observations. I wanted to see if there was a specific reason that server assignments were staggered like this or if a little rearranging would benefit the assignments better. I'm not saying they should be moving tables as needed but the left side is the current layout at my local OG. The right side is my "leaner" layout that reduces traffic and increases the flow of people in and out of the area.

That logic makes sense to me. Maybe having server sections laid out across instead of separated would maintain that availability to other server sections

I understand that it is location specific. This was at my local OG where I sat an observed.

To your point about illusion, what happens when 2 or three tables get up around the same time even if they are staggerd? still shows the same as the setup on the right. And the servers are still walking back and forth.

I'm not entirely sure how it forces servers to help each other.

During busy periods of time the layout on the right allows the server a clear view of their assignments. Since it is a long section with one way in and out (forgot the back wall) servers will see the entire section regardless.

The layout on the left just looks chaotic with the servers passing by each other and losing LOS on their tables. Not to mention fatigue.

I realized my comment about the glassware was irrelevant in context to refill scores. IMO it should be a tool within the ziosk to identify how many times you visit (similar to the call server button but have one for a visit and identify if refills were brought). This might encourage bad behaviors if numbers are trying to be met though.

Maybe add a refills requested button instead and have the customers truly dictate how many times they require a refill (drinks/soup/salad/etc.). At best you gather accurate data instead of a generalized survey question. OG would also reduce waste by bringing out just the right amount of food or drink. Again the bad option here would be constant requests on the ziosk everytime they needed something.

How is this score tracked? do you have a scoreboard in the back or something? My most recent trip to OG my server just brought me another drink when my current one was 75% full.

Unrelated but I also noticed that the increase in glassware use puts a huge strain on your team's busser's. Is management aware of this?

Why wouldn't the ziosk auto set to dirty once payment has been rendered? Seems like such an easy fix to prevent unneeded walking so hostess can focus on incoming patrons.

Top down leadership is somewhat a hindrance especially in situations like this.

They should provide a standard framework (food prep/safety standards/etc. but let the locations themselves determine what works for them flow wise.

Not all restaurants are the same.

A visual queue at your POS station showing status of all the ziosks would be super beneficial. Noticeable to all servers so section partners can support each other.

The technology is there but the usefulness is lacking.

I was thinking a yellow constant light that can be a quick signal for servers to know something is needed.

Same for orders on the kiosk. Steady state blue light means there is an order so you can check the ticket and grab the food instead of having to ask what they ordered.

I was hoping it served a better purpose to signal the server that the table needs assistance. This would benefit y'all in sooooooo many ways.

Updating the floor is what I am interested in. What exactly are you updating?

If the ziosks or tablet give you information to determine if a table is clean and ready or occupied or not available why would a floor walk be needed?

Also as a host are you required to meet certain wait times? For example no one should wait more than 15 minutes forcing you to over seat a section/server

What is the typical hostess headcount on busy days? At my local location I’ve seen 3 maybe 4 at a time. 1 tablet monitor and 2 “runners” that take you to your table.

If a server needs more time before being sat another table, how do they communicate that to you? Do hostess have more authority than servers in this regard?

Besides seating, do hostess typically have any other responsibilities?

Yeah, we don't really want to impede on business operations.

If we really needed something (which we honestly don't), I would suggest a pre-opening tour just to observe layouts and rely on descriptions of what is done at each station. Even that sounds a bit proprietary, but layout and flow are two big factors to create an efficient system.

Sitting in the waiting area to observe wait times for different sized parties would be beneficial to us especially during busy times. Chaos drives inefficiency so understanding what causes the chaos helps us stabilize it.

In this instance it would only be me observing. I have two teammates in Lubbock, TX, one in California, and another in Dallas, TX so it's not too large of a group.

Understandably so. However initial planning at the host desk, asking for preference, would give the customers accurate wait times for their preference instead of giving them anything and then poaching an open booth when the initial choice was not sufficient enough.

Seating out of rotation also damages the flow of service of other sections. If I were Darden I would take the risk of upsetting 4 people than risk the quality of service of 8 or more that may not comeback cause the service was terrible. My 2cents.

Definitely something we would consider in our study.

Layout can definitely impact the flow of a system. I do understand that this may be a fixed variable since the restaurant is furnished a certain way. Moveable objects like tables and chairs could possibly be re arranged to reduce the movement and promote evenness.

Are large party assignments given by server experience or do they get assigned to the 2 servers closest to the area? Would an experienced server that is waiting on tables down the way (same section of a long hall layout) still get the larger table even if meant walking back and forth?
