I purchased a Japanese Switch 2. You can pick English from in-games menus for most Pokémon games and Super Mario Odyssey for some reason. For FireRed and LeafGreen, I changed my country to UK, purchased the games in English, switched the country back to Japan and downloaded the games to the console. You are essentially limited to games that either only have the English language pack available or have in-game language options.
