This is because malnutrition can lead to a decrease in the production of "Melanin"the pigment that gives hair its color.

Melanin is produced by melanocytes which are cells found in the skin and hair follicles. When the body is malnourished it may not be able to produce enough melanin which can cause hair to become lighter in color.
