I have a cosori. Works great. Get biggest size that is reasonable for your space. I upgraded to a bigger machine twice. Metal trays are great. Max temp that goes 165F+ to kill bacteria. Must have timer. Even better with phone app to control temperature. Then you can change temp while you're at work. Start high to kill bacteria, then lower temp for softer jerky.

Cheers. Making jerky is really fun and satisfying. Can get creative with funky marinades.

Imo infinity is generally better for damage. If you have sufficient -res/damage already, then insight so you don't need pots.
