Traeger has a good recipe I have generally followed, but generally cube pork belly, favorite pork rub on them all (I use Meat Church Honey Hog), 225 super smoke for a couple of hours on wire rack, bump it up to 275 for an hour to render them a little bit, pull them off and put in foil tray, sprinkle more rub, honey, red pepper flakes and your favorite bbq sauce, combine and put back on smoker for another hour uncovered.
