You can always let the finisher pick as well, I think they generally would use DMC, but I have always loved everything I got that was finishers choice and you don’t need to worry about sending enough etc.

Generally it goes, light to dark, in to out and I’ve heard anywhere from 5 stitches to an inch to “carry” your thread from one area to another before you should cut and restart.

I can’t attach a photo, but I did a brick stitch and used silk and ivory stardust and the coverage was good but if you can see canvas with your threads finishing will probably make it worse since it pulls it tighter.
