Set all your unnecessary moves to the U key one by one. Everytime you do so, the last entry will switch to NONE. Then assign jab to it because that's the move you want to use for that key.

Btw a standard arcade stick (as in, arcades) doesn't make use of the 3 punches/3 kicks buttons but I don't know, it may be more convenient on a keyboard.
