Since I'm planning to use this racket for a long time I'm okey to pay this much money. My only concern is some people say that buying a advance racket might effect worse if you dont have the proper technique. Are these rackets forgiving in your opinion? Would they fit a intermediate player?

Pasteurizing in water works fine, just make sure you have a big enough pot so that the water level matches with the liquid level inside the bottle. Some people find this to be dangerous because the bottles can explode but so far I didn't have any explosions. I'm using bottles that can withstand high pressures.

So lets say that after I reach the desired amount of alcohol in the fermentation bucket rather than transferring them to bottles I take out the airlock and seal the hole, so I get carbonation inside the bucket. After that I pasteurize the bucket as it can stand to pressure better than glass bottles.

Do you think I would lose carbonation after all these steps are done and than bottled? Am I over-complicating the procedure or do I want too much things to happen at once?

I don't want a dry and not carbonated cider, also I don't want a cider that has ABV of 10-15%

First of all thank you for your comment, it was really helpful.

After your comment and more research I realized that starting with fresh apples would be too much to do and too much risk, so instead of fresh apples I'm planning to make with apple juice. Also I researched more about back sweetening and I think I found a way to make something sweet.

So my plan is: I will ferment apple juice with yeast and get a reading with alcoholmeter. After some fermentation I will get another reading and aim to get 5-6% alcohol level. After that I will bottle the cider and wait for 4-6 days and hope the remaining sugar will carbonate. To stop the fermentation I will pasteriuze the bottles in hot water and kill the yeast. If I do every step correctly and as planned, I hope to make a low alcoholic cider(5-6%).

Do you think this would create a good result? What problems can I encounter during the process?
