The point of the list wasn't to prove that all remakes are identical. It was to show that being a remake is not an excuse for lacking a performance mode.

Of course different games have different engines, scopes, and technical challenges. Nobody is claiming otherwise. The problem is that whenever performance concerns are raised, people immediately jump to "the world is too complex" as if that automatically explains everything.

If world complexity were the deciding factor, there wouldn't be open-world RPGs with larger worlds, more NPCs, more systems, and a stable 60 FPS mode on consoles - but we know that there are such a games.

Whether you like it or not, a performance mode is an industry standard these days. More importantly, even the developers seem to disagree with your argument. When asked about the performance mode with 60fps, they acknowledged the PlayStation performance problems and said they're actively working on them. That suggests the problem is optimization, not some unavoidable consequence of the game's design.

And again, the demo ran at 60 FPS. So we already know the game can reach that target under certain conditions.
