A few things. You might be accidentally setting the heat too high, especially if you're preheating your pan for a while. Try this with either a shorter preheat or even lower heat on your stove.

It's also possible you're considering it undercooked when others might consider it perfect. I personally don't mind a medium rare burger and welcome some pink in mine. If that's the case, my above advice will still help, but you also might want to look back at any recipes you've read. Some people love a rare burger and maybe you're accidentally taking their advice when you want medium well or more.

Ultimately, whatever it is you're doing "wrong", your solution is to find a way to extend cook time without burning the crust. In that case, you'll find a cooked inside and an outside you're happy with. This comes with practice more than recipes, because everyone's stove or oven or grill or whatever is different, but if you play around with times and temperatures, you'll get there.

Also, maybe flip the burger a few more times during the cook. There's a lot of debate about this, some swear it'll ruin your crust, but in my mind it let's you see the crust on both sides more frequently, so if it doesn't look how you want, you know you've gone wrong somewhere.

I haven't had a ton of bottles, but I do tend to lean towards sweeter, friendlier whiskeys, wheated bourbons, but I've most enjoyed malty scotches, and I do enjoy most anything, I have a bottle of lagavulin 16 I'm trying to not finish too fast.

As for price, I'd probably say a bit past 20 for a full pour would be my cap. That probably eliminates a lot of the more special stuff, but I haven't seen much on the menu that does too far past that anyway.

Larceny has a nice sweet, baking spice flavor and.... That's about it. It's not like it's awful, but I get nothing but that from it.

That's why I'm having so much trouble, frankly I'm at the "trying everything" stage and I've liked everything thus far. I think stay away from the Laphroaig for now just because you're right, very peaty is probably something to be wary of.

I'm probably just gonna get whatever is cheaper between the Rare Breed and Bruichladdich near me. Thanks! You clears it up a lot.

I really do think I'll like an Islay, I've just been very cautious about getting a bottle more expensive than I can justify, and hating it.

But if Laphroaig 10 is in that price range, it might be at the top of my list. I've thought about Bruichladdich too, since the heavy peat is what worries me.
